Anis Bistro’s Moules Marinières

There is no better place to find classic Provençal fare in Atlanta than at Anis Bistro. Set in a converted cottage nestled in the heart of Buckhead, this has been one of Atlanta’s hidden gems for over 23 years. Anis is the perfect place for a romantic lunch or dinner, especially if you’re lucky enough to snag a table on the tree-shaded brick patio. The specialties are Provençal versions of healthy French cuisine, like these amazing mussels in creamy wine broth.

Anis Bistro's Mussels
Moules Marinières
serves one as an entrée

20 cleaned mussels (about 3/4 pound)
3/4 cup white wine
1/2 cup heavy cream
1 Tablespoon chopped garlic
1 Tablespoon chopped parsley
1 Tablespoon unsalted butter
pinch cayenne

In a large saucepan, combine mussels, wine, cream, garlic, parsley, butter, and cayenne. Cover pan and cook over high heat for 2 minutes. Remove lid and toss everything together. Cook, covered again, for 2 more minutes, or until all mussels have opened. If any of the mussels don’t open after cooking, discard them. Serve immediately, preferably with good bread.
