Breakfast Pie from Tupelo Honey Café

While there are two filling options listed below, feel free to create your own based on your preferences. Add broccoli, asparagus, sausage… you really can’t go wrong!

1 pie crust (store bought or homemade)
6 eggs
1 cup heavy cream
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 1/2 cups (6 ounces) shredded cheese
2 tablespoons (1 ounce) grated Parmesan cheese
1 1/2 cups cooked filling, well drained

Filling Option 1:
1/2 cup chopped cooked bacon
1/2 cup finely chopped onion
1/2 cup of either sautéed mushrooms OR chopped roasted red bell peppers

Filling Option 2:
1/2 cup cooked spinach (squeezed dry)
1/2 cup finely chopped onion
1/2 cup sautéed mushrooms
1/2 cup either diced ham OR chopped cook bacon

Preheat oven to 350 degrees Fahrenheit. Place the pie crust already in pie plate on a baking sheet for easier handling. Sprinkle the shredded and grated cheeses into the bottom of the pie crust and top with the prepared filling of your choice.

Beat the eggs in a large bowl with a wire whisk, whisking in the cream, salt, and pepper. Carefully pour the egg mixture evenly over the filling, allowing it to soak into the layers. Bake until puffed, set, and lightly browned, 55-60 minutes.
