Lamb Keftedes with Tzatziki from Kouzina Christos

Kouzina Christos

makes one pound

1 lb sour cream or yogurt
1 large cucumber, striped with fork tines and coarsely grated
4 oz. lemon juice
4 oz. red wine vinegar
1 Tablespoon salt
2 Tablespoons dill
2 Tablespoons puréed garlic

Lamb keftedes:
1 lb lamb
1 lb ground beef
1 onion, peeled and puréed
8 oz panko breadcrumbs
1 tsp cumin
1 tsp mint
2 eggs
1 Tablespoon salt
1 Tablespoon pepper
1 Tablespoon oregano
1 Tablespoon parsley
8 oz. feta

For the tzatziki: Mix all ingredients together in a bowl and refrigerate until ready to serve.

For the lamb keftedes: Preheat oven to 475 degrees. Mix all ingredients together in a bowl with your hands. Using a 3-ounce scoop, shape keftedes and place on a sheet pan. Place in oven and bake for approximately 20 minutes, or until well browned. Remove from oven, cool slightly, and serve with tzatziki.
