Taco Tuesday: Burrito Beach

Tuesday gets a bad rap as a weekday. It doesn’t have the “motivation” that comes on Monday or the “wine” like Wednesday does. However, luckily for Tuesday, we have tacos! And while we would never try to talk you out of going to a restaurant for dinner, you really can have your own ‘Taco Tuesday’ at home. The chefs behind the delicious concept Burrito Beach {various locations} have shared simple recipes you’ll want to make immediately.

Vegan AvoTacos

  • 6 corn tortillas
  • 1 avocado
  • 1 teaspoon lime juice
  • 1 pinch salt
  • 12 slices fresh jalapeño pepper
  • 3 large sprigs cilantro

Place three tortillas on a warm griddle and cover each with another tortilla. Warm tortillas until hot and a little crispy. Place 1/3 of the avocado onto each stack of tortillas before smashing the avocado with a fork and spreading over the entire tortilla. Sprinkle each tortilla with salt and lime juice. Garnish with jalapeño and cilantro and serve.

Tilted Tacos

  • 4 oz chicken Asada
  • 2 oz Baja sauce
  • 2 hard taco shells
  • 3 oz guacamole
  • 1 oz nacho peppers
  • 1 oz jack cheese
  • 1 oz diced tomato
  • 1 oz sour cream

Marinade and grill chicken. Dice and drizzle chicken with Baja sauce and add to taco shell. Garnish with guacamole, nacho peppers, jack cheese, diced tomato, and sour cream.
