Chopped Salad

Our intern Jane O’Connor threw together this delicious and hearty Chopped Salad! Pack dressing separately so that the greens don’t become soggy.

Chopped Salad

serves four

Ingredients

Salad:
1 head romaine, chopped
2 c Gorgonzola
4 hard boiled eggs, chopped
1 c grape tomatoes, diced
8 slices cooked bacon, chopped
shredded Parmesan cheese (optional)

Dressing:
6 Tbsp olive oil
2 Tbsp white wine vinegar
1 Tbsp fresh lemon juice
2 cloves garlic, minced
salt and pepper to taste

Method

For the salad: Toss together romaine, crumbled Gorgonzola, eggs, tomatoes, bacon, and Parmesan if desired.

For the dressing: Vigorously whisk together olive oil, vinegar, lemon juice, and garlic until emulsified. Season to taste.
