Born out of a love of hot chicken and cold beer, the newest outpost of The Post Chicken & Beer {2220 South Broadway, Denver; 720.466.5699} landed in Rosedale—and or South Broadway—neighborhood this past January. The fast-casual restaurant promotes all of the finger-lickin’ goodness of its Lafayette predecessor, including warm buttermilk biscuits, housemade country gravies, and the famed Colorado-style fried chicken, all of which you can find at their weekend brunch.

You can’t go wrong with the comforts of carbs, and the Post has you set. Order up the classic Buttermilk Cheddar Biscuits with whipped apple butter or if you want something sweet, try the Cinnamon Sugar Donut Holes with maple whipped cream.

Colorado-style Fried Chicken

Of course, the crowning glory of the outpost lies with gluten-free Colorado-style fried chicken, crafted by mastermind Chef/Owner Brett Smith. “Lots of love and time goes into our fried bird,” he says. “It is brined for a few hours, then set in the first flour overnight to develop the crust, then brushed with buttermilk, and finished in the second flour before being pressure fried.” What we get is nice n’ juicy bird, with a perfectly crisp crust.

Of course, you can order up a basket of fried chicken with mimosas (or just straight up champagne) and call it brunch or you find this gluten-free bird all throughout the menu. The boneless fried chicken breast–all though not brined—is featured in a variety of dishes including the Chicken & Waffles topped with a chile-cherry chutney or the best seller Chicken & Biscuit. Make it a feast with a litany of down-home sides including Collard Greens and Green Chili Mac & Cheese.

To wash it all down, the restaurant offers a small menu of brunch cocktails including the Man-Mosa (vodka, OJ, and Post Top Rope) or the bubbly breakfast sipper, Country Bubbles. Always an option, you can also order an award-winning beer from The Post, because chicken and beer is about as heavenly as it gets.
