Chinese Chicken Lettuce Wraps
2 Tbsp olive oil
1 Tbsp sesame oil
1-1/2 lb ground chicken
1 onion, finely diced
4 cloves garlic, minced
2-inch knob of ginger, grated
4 oz hoisin sauce
3 Tbsp soy sauce
2 Tbsp rice wine vinegar
4 Tbsp Sriracha (more or less to taste)
1 8-oz can whole water chestnuts, drained and chopped fine
6 scallion, thinly sliced (save the dark green slices for garnish)
salt and pepper, to taste
1 head butter lettuce
Heat both oils in a saucepan over medium-high heat. Add ground chicken and saute until browned. Add onion and cook until onions are translucent. Add ginger and garlic and sauté 1 minute more. Add hoisin, soy, rice wine vinegar, and Sriracha. Finally, add water chestnuts, the whites and light green slices of scallion, and salt and pepper to taste, and cook entire mixture about 2 more minutes.
To serve, spoon chicken mixture on to lettuce leaves and garnish with scallions.
