Chase Gebhart, bartender at the beloved Denver speakeasy Saint Ellie, which closed its doors in December 2019, talks cocktails and shares his drink recipe for the Dark N Roasty.
DiningOut: What do you enjoy most about bartending?
Gebhart: What I enjoy most about bartending is the opportunity to connect with people I would never normally meet. I get to have people from many different places and backgrounds available to engage with.
DiningOut: What goes into creating a great cocktail?
Gebhart: Creating a great cocktail is all about balance and using different ingredients and flavors to create something greater than the individual parts. I like to keep things as simple as possible while making something that tastes complex.
DiningOut: What is the inspiration for this cocktail?
Gebhart: My inspiration for the Dark N Roasty was the classic Dark N Stormy, a well-known drink that has dark rum, lime juice, and ginger beer. For my version, I added some coffee and pecan bitters to bring a more wintery feeling to the drink while keeping it spicy and refreshing.
The Cocktail: Dark N Roasty
Key Ingredient: Myers’s Original Dark rum
In an ice-filled shaker, add 1 1/2 ounces Myers’s Original Dark rum, 3/4 ounce ginger syrup, 1/2 lime juice, and 4 dashes of coffee pecan bitters, then shake until very cold. Strain into a coupe glass and garnish with a lime wedge.
