Owner Christine Ruch brings more gluten-free options to Boulder

Boulder’s Fresh Thymes Eatery {2500 30th Street, Boulder; 303.955.7988} has been offering Boulderites gluten-free, allergy-conscious, gourmet eats in Boulder for three years, but Owner Christine Ruch lately saw an opportunity to expand her mission—by opening a marketplace and demo kitchen just a hop away from the restaurant at 2690 28th Street, across from Rally Sports.

Ruch, an accomplished chef and seasoned restaurateur, has struggled with some of her own food allergies and dietary limitations through the years. When she landed in Boulder several years ago, she realized that an “allergen-friendly, seasonal, ingredient-conscious” concept could thrive in the community; indeed, over the past three years, she has built a loyal following of locals who long suffered from a slew of allergies, but now enjoy allergy-free eats at Fresh Thymes. For each one, she has worked to craft wholesome recipes that deliver flavor—without adverse reactions.

The new marketplace and demo kitchen, opened on October 5, doubles Ruch’s efforts, delivering live cooking demos, catering options, and easy grab-and-go meals that cater to customers with gluten, dairy, and peanut allergies, as well as vegetarians, vegans, and paleo patrons.
