DiningOut Dubai: How does your national influence affect your cooking style at the start of your career, and now?
Christian Singer: My nationality was never affecting my cooking style, I am and will always be a person who is open-minded.
Having worked in all parts of the kitchen at the start of your career, what is the best part about being a chef?
The possibility to give guests with your food something unique, and the feeling you make the people happy.
If you could give your younger self advice, what would it be?
Go out and eat ….because you learn when you eat. Sometimes good, sometimes bad.
What do you think makes our food community unique in Dubai?
The influence from people all around the world
Other than the restaurants you have worked for, what are some of your favorite Dubai food spots?
Ravi’s: it looks simple, but tastes amazing, especially the chicken ginger with the fresh baked roti. Also Pai Thai, which for me is one of the best Thai restaurants. It has high quality products and a balance of intense, power, and full flavours.
Now onto the kitchen. What did you bring to the culinary table at your restaurant?
We bring our idea of Asian cuisine to our guests. Based on the best products that we can buy for money combined with the typical flavors of Tim Raue consisting of sweetness, spiciness and acidity.
What are some of your favorite dishes on the menu?
For me personally, all of them! But a lot of our guests like our signature dishes like the Wasabi Langoustine, the Steamed Turbot with Kamebishi Soysauce, or our Peking Duck.
What do you hope people feel or experience by dining with you?
We want that the guests feel our idea of Asian food with all the power and intensity on a highest quality level, paired with the casual atmosphere in our restaurant.
Do you have any special dishes or drinks we should try ?
Our Wasabi Langoustine. This dish has everything that our kitchen represents. It has different textures; it’s cold and hot; it’s sweet, sour, and spicy; it’s crispy & tender. It‘s like a roller coaster! We serve it togheter with one of our JINES flavoured with apricot, passionfruit, and glutinius rice
