Chef Richard Sandoval’s elegant Cherry Creek restaurant, Toro, located inside the Hotel Clio, celebrates NYE with a champagne toast and a special menu, all for $130 per person. Start with a choice of appetizer such as crispy prawns with panko bread crumbs, melcocha sauce, mango crema, and rocket salad. There’s also roasted beets with gem lettuce, jicama, green apple and hibiscus orange vinaigrette, and a lobster corn chowder with guajillo, old bay corn relish and crème fraiche foam.
On the entree side, find a few choices as well. One, the chili-crusted prime rib with mashed potatoes, ancho demi glace, garlic horseradish, and mint chimichurri, and up the ante by supplementing with an herbed butter lobster tail for $36. Boulder’s most elegant rooftop restaurant is ringing in 2025 with a special, $150 four-course menu with an optional wine pairing for $95.
