Owner at The Roxy Encinitas & The Roxy on Broadway

My career really started at the age of 14 when I got a job working as a busser & hostess at a sports bar. After high school I decided to join the Air Force. After a few years Paula left the military and began working as a veterinary technician during the days, and bartending at nights.

Paula comes from a long line of restaurateurs beginning with her grandfather Paul from who owned a small 14 seat burger joint in Waukesha, WI and her Father who owned Paul’s Metropolitan diner prior to becoming a state of Wisconsin assemblyman.

With over two decades of experience in every position from line cook to dishwasher, bartender to bar manager, she has gathered a myriad of experience in different facets of the industry.

While opening her first two restaurants Paula worked as event beverage manager at the Manchester Grand Hyatt San Diego to gain experience in venue and catering that she could incorporate into The Roxy both in Denver and in San Diego.

In 2016 Paula became a co-owner and managing partner of The Roxy Encinitas, in California. Together with the help of her Father the space was completely remodeled into its classic 1920s atmosphere. Originally established in 1978, The Roxy is a vintage-modern restaurant and music venue that delivers classic 1920’s inspired cocktails, locally sourced and internationally influenced share plates and live music seven nights a week as well as brunch on Saturdays and Sundays featuring live music. In early fall of 2019, Paula opened the second outpost of the Roxy brand – Broadway Roxy – in Denver’s bustling South Broadway neighborhood.
