It’s spring and Rijoa is celebrating rosé wines and springtime ingredients. Chef Kylil Henson created a unique menu of dishes and the beverage team has paired with their favorite rosés. Dishes like tuna tartare with black garlic aioli, red verjus gel, celery, and cherry crisps and seared duck with pink peppercorn, tabbouleh, and rhubarb mostarda are paired with pink wines like Blushing Bear by Kyle Maclachlan from Washington’s Columbia Valley and Whistler’s Dry as a Bone out of Barossa Valley, Australia (perhaps the world’s most underrated wine region).
