Making New Year’s resolutions is a great way to start the year with fresh perspective and goals. Many people strive to eat healthier, but finding food options can be a challenge, especially when eating out. We’ve compiled a list of five local restaurants that make it easier to stick to nutritious options that are both satisfying and delicious. All of these businesses prioritize fresh, whole ingredients in their meal options so you can enjoy eating out while still staying on track with your 2023 lifestyle changes.

Somebody People

Making a splash onto the Denver food scene, Somebody People opened off South Broadway in 2020, and has remained a must-visit for all diners. Fun artistic decor with DJ sets creates a light atmosphere in which to enjoy their Vegan Mediterranean menu.

Vital Root

3915 Tennyson St, Denver, CO 80212

As with all the Edible Beats concepts, Vital Root serves a flavorful “vegetable-forward menu” off of Tennyson Street. Weather permitting, the space opens up with a garage door front and a backyard-like patio. This fast-casual restaurant offers gluten-free, vegetarian, and vegan options to fit all dietary needs.

Just BE Kitchen

It was only three months ago that Just BE Kitchen expanded to their second location in DTC. The reason for the success of this restaurant is the mission of founder Jennifer Peters, “to serve mindful mouthfuls from a conscious kitchen with kindness on a plate”. This meant building a safe kitchen free of major allergens and gluten while maintaining flavors that appeal to any palate. 

The Green Collective Eatery

2158 W 32nd Ave Unit 100, Denver, CO 80211

This LoHi “clean eatery” focuses on creating an organic, refined sugar-free, superfood-forward menu. The co-founding sister duo, Allison and Jamie, who suffer from autoimmune thyroid disease, took their knowledge and collaborated with professional chef Lauren Egdahl to curate healthy breakfast and lunch options including smoothies, juices, bowls, salads, toasts, and more. 

The Corner Beet

1401 N Ogden St, Denver, CO 80218

Located in the Capitol Hill neighborhood, The Corner Beet is popular for whipping up their superfood lattes and cold-pressed juices. They offer a full vegetarian menu for breakfast and lunch, along with a few vegan options. The surrounding natural foliage as well as both indoor and outdoor seating make this a great place to grab a bite or sip with friends.
