April is Earth Month, and it’s time to hit the streets of the Mile High City to discover delicious wines crafted with Mother Nature in mind.

Sustainability in wine is a broad umbrella encompassing a huge variety of practices. We’re going green, from organics and biodynamics to natural wine and more!

Dive into the details with me as we explore a lineup of delicious wines you can enjoy in Denver-area restaurants that care about what you put into your body and how it impacts our planet. 

From a chillable red to the most delicious orange wine to a flavor-packed Italian red to a fizzy Pet Nat, there’s something every wine (and earth) lover can embrace this month.

Nurture Wellcare Marketplace is an urban oasis where Denver’s health-conscious can experience various self-care services in an energized, beautifully designed environment. The collaborative space boasts wellness options, including massage, energy work, IV therapy, and more.

When breakfast or lunchtime rolls around, the project’s Nest Café offers a “clean, conscience, and wholesome” dining experience with menu items designed to enhance vitality and leave you feeling balanced and fulfilled. The in-house bakery makes muffins, scones, and cakes without adding refined sugars, oils, or flour. Bone broths, soups, tartines, and other seasonal dishes cater to vegan and gluten-free eaters with simple, delicious ingredients from local sources.

For this pairing, I started with the food. I’d gladly travel double the distance to enjoy my favorite salad in Denver, Nest Café’s frenzy of salmon served over a bed of fresh arugula with cabbage, ginger, carrot, cilantro, and sesame dressing topped with perfect-every-time avocado and black sesame seeds.

To compliment the dish, I chose Obsidian Wine Company’s Pezsgő’ Pinot Noir Pet Nat from the incredible climate region of Carneros, which straddles the Napa Valley and Sonoma border. This fun, naturally fermented sparkler is a brilliant shade of pink crafted from 100% Pinot Noir grapes. With an approach dedicated to winemaking that is truly expressive of place, the team sets ego aside and allows Mother Nature to present herself through the bottle.

This Pet Nat, or pétillant naturel, wine is made from grapes sourced from the Poseidon Vineyard, located at the confluence of Carneros Creek and the Napa River, where the cool, maritime climate is well-suited to Pinot Noir vines. The resulting wine is light and fresh with tart raspberry and lemon peel flavors. The wine is bottled unfiltered and without the addition of sulfur.
