This Michelin Guide-recognized Thai restaurant in Summerhill specializes in transforming Georgia-grown produce into delicious dishes with a Southeast Asian spin. Case in point: the Crispy Rice Salad. Pink Lotus, the funky West Midtown sibling of 26 Thai, opened in 2025 and quickly earned a reputation for doing things differently. The Crispy Kale salad is a prime example: chef Sam Anchalisangkat tempura-fries individual kale leaves until crisp, adds herb-marinated minced chicken, and finishes it tableside with a spicy lime dressing. Chef Deborah VanTrece’s Cascade Heights restaurant makes one of the most Atlanta salads you’ll find anywhere. Raw collard greens are massaged until tender—bringing out that pleasant chew without the bitterness—and stand in as the base for a Greek salad framework: feta, tomatoes, crispy chickpeas, and a creamy, garlicky vinaigrette. The founders of Whiskey Bird grew up eating across Hong Kong, Japan, and Southeast Asia, and that restless Pacific Rim palate runs through everything on the menu at this Virginia Highland hangout. Mixed greens are piled high with smoky, tender jerk chicken, cherry tomatoes, red onions, jalapeños, and Monterey Jack, then tossed in a balsamic dressing. The chicken is the anchor, generously portioned and seasoned with a fragrant blend of Haitian-Caribbean spices. Some version of a lettuce salad has always been on the menu at Jarrett Stieber’s Michelin Bib Gourmand-recognized Summerhill restaurant, and the specs are constantly evolving. The bowl is defined by seasonal bounty from Little Bear’s farmer partners—one iteration arrived with preserved strawberries and Meyer lemon dressing; another with manchego, peanuts, and pickled green beans. It’s all in the name: Tum Pok Pok on Buford Highway is named for the sound of the pestle hitting the mortar while making som tum. Chef-owner Adidsara Weerasin built the restaurant around Isaan cooking—the fiery, fermented cuisine of northeastern Thailand—and this is the dish at the center of it all. Shredded green papaya, pounded to order with garlic, chiles, fish sauce, lime, sugar, peanuts, and dried shrimp. It’s sour, spicy, funky, and simply addictive.
