Hudson House is doubling down on Houston.
The Dallas-born restaurant known for ice-cold martinis, oysters and cheeseburgers will open two more Houston-area locations in 2027, expanding to Katy and Memorial City. The additions will bring Hudson House’s Houston-area footprint to four restaurants.
Vandelay Companies announced Wednesday that Hudson House will open at LaCenterra at Cinco Ranch, at 2643 Commercial Center Boulevard in Katy, in early 2027. A second location will follow at the Greenside development in Memorial City, at 1085 Gessner Road, Suite 290, with an opening planned for spring or summer 2027.
The expansion comes three years after Hudson House first entered the Houston market. Founded in Dallas in 2017, the East Coast-inspired neighborhood restaurant made its Houston debut in the River Oaks Shopping Center in 2023 and has since continued its push across Texas, including a follow-up location in Rice Village.
“Since opening our first Houston-area Hudson House in 2023, we’ve seen a tremendous response from guests across the market,” Vandelay Companies founder, chairman and CEO Hunter Pond said in a statement. “The success of our two existing Houston-area locations has continued to reinforce what a strong fit Hudson House is for the market.”
Hudson House has built its following around a polished take on the classic neighborhood restaurant, with a menu that straddles seafood house, sushi bar and American comfort food. Its raw bar is stocked with East Coast oysters flown in daily, while familiar signatures include the Hudson’s Avocado Dip with ranch chips, chicken Parmesan with creamy tomato pasta and the Hudson Salad topped with popcorn chicken, bacon, avocado and green goddess dressing.
Then there’s the cheeseburger, a deceptively simple stack of thin patties, American cheese, pickles and Hudson’s house sauce that has become one of the restaurant’s calling cards.
Sushi is also a substantial part of the menu, with selections such as spicy tuna crispy rice, the salmon-topped Sunset Roll and a riceless Signature Roll made with salmon, tuna, crab, avocado, tempura flakes and spicy ponzu.
The bar has developed its own draw, particularly during happy hour. Hudson House bills its signature cocktail as the “World’s Coldest Martini,” made with Grey Goose vodka served on tap at 10 degrees. Variations include the Bleu & Gold with olive juice, bleu cheese salt and housemade bleu cheese olives, along with lemon drop and espresso martinis. Frozen Bellinis, spritzes and classic cocktails round out the drinks list.
Both new Houston-area restaurants will carry over Hudson House’s familiar look, with leather booths, large wraparound bars, dedicated sit-down raw bars and outdoor patios. The Memorial City restaurant will span approximately 6,000 square feet, while the Katy location will encompass about 5,600 square feet.
The two openings are part of a larger growth spurt for Dallas-based Vandelay Companies, which operates a portfolio of restaurant concepts across Texas and beyond. But in Houston, the strategy appears increasingly focused on taking Hudson House beyond the Inner Loop and into some of the region’s busiest suburban dining hubs.
Hudson House Katy is expected to open in early 2027 at 2643 Commercial Center Boulevard in LaCenterra at Cinco Ranch. Hudson House Memorial City is slated to follow in spring or summer 2027 at 1085 Gessner Road, Suite 290.
