All-day cafes and eateries have been popping up all across Dallas, and this Friday, June 19, Lower Greenville will welcome a new day-to-night destination that blends casual dining with a contemporary, neighborhood feel. Walkers’, an all-day market, bar, and restaurant designed to move seamlessly with the rhythm of East Dallas will open at 3016 Greenville Avenue, next to Window Seat Coffee.
Siblings Rosemary Walker-Greene and Russell Walker are the team behind the new concept, which is equally suited for a quick lunch, a casual glass of wine or a lingering dinner. The restaurant is inspired by their grandmother, Rosemary, who instilled in them a love of food and hospitality from an early age.
“The spirit of our grandmother (aka”Mère”) informs the entire ethos of hospitality, generosity, and warmth that the space is built on,” the Walkers told Dining Out. “Her handwriting, adapted from her signature, forms the foundation of the Walkers’ logo, grounding the brand in something deeply personal and authentic. Her influence also lives in the details such as her handwritten recipes printed on the deli wrap, framed recipes displayed throughout the restaurant, and photographs of her integrated into the space as quiet reminders of her presence.”
Opening a restaurant together has long been a dream for the siblings, and they felt Dallas was the right place to bring it to life. “It’s a city that respects tradition but isn’t precious about it,” the sibling duo said, “There’s room here to build something thoughtful, personal, and community-driven without losing a sense of ambition.”
By day, Walkers’ will serve as a relaxed neighborhood destination offering sandwiches, a curated market, and a bottle shop. At night, it will transition into a contemporary American restaurant with classic cocktails and a dynamic wine program.
The daytime concept, known as the Market, features a curated selection of specialty goods from California, New York, Europe and other places that have meaningfully influenced Rosemary and Russell’s lives. “Our ingredients aren’t about a single item so much as a philosophy: pristine produce, high-quality olive oil, thoughtfully sourced proteins and pantry staples we believe in and use with restraint,” the Walkers said.
Whenever possible, the duo will prioritize Texas farms, though their focus is less about geography and more about relationships, seasonality, and working with growers who care deeply about what they produce.
During her time in Los Angeles, Rosemary built close relationships with many of the farmers and producers at the Santa Monica Farmers Market, widely regarded as one of the best in the country. When one of the Texas farms the team worked with lost its entire crop, she was able to reconnect with vendors from the market to help supplement sourcing.
Using those ingredients, Walkers’ will offer made-to-order sandwiches and salads, including an Italian sandwich with Lady Edison salumi, mortadella, provolone, hot giardiniera mayo, lettuce, tomato, vinegar and olive oil, as well as a steak salad with cabbage, carrots, onion, mojo verde, cilantro and cherry tomatoes. Guests can pair their meal with items such as Bonilla a la Vista potato chips from Spain and Raazi Tea from Brooklyn.
The Market spans 950 square feet and includes six seats at the sandwich bar, six table seats and a communal table that seats eight. Bespoke millwork shelving and vintage cabinetry will showcase market goods and the wine collection.
Beginning at 4 p.m., the wine bar will offer 20 wines by the glass alongside bites such as Spanish anchovy toast and beef tongue with crème fraîche and mojo verde.
Rosemary, an Advanced Sommelier whose experience includes the NoMad in New York and Los Angeles, Carbone Dallas and Rustic Canyon Family of Restaurants in Los Angeles, oversees the wine program. The European-focused wine list will highlight small, sustainably minded producers, with a particular emphasis on Champagne, Burgundy, Jura and beyond.
“Wines from these areas are naturally food-driven and expressive, and they mirror the way we think about cooking,” the siblings said.
At 5 p.m., the wine bar transitions into dinner service, offering an experience that balances informality with elegance. Chef Aldon Reyes, formerly of Georgie and Le PasSage, leads the kitchen. Before moving to Dallas, Reyes spent six years at Michelin Bib Gourmand-recognized Juniper & Ivy in San Diego.
The dinner menu will focus on seasonal ingredients, featuring lighter bites, shareable plates and refined entrees. Highlights include agnolotti with English peas and sheep’s cheese, as well as lamb served with labneh and mint.
Guests will enjoy their meals in a quietly luxurious dining room designed by Los Angeles-based Kevin Klein Design. The studio paired antique fixtures with rich fabrics and oak millwork throughout the 1,360-square-foot space. Seating includes 43 dining room seats, 12 bar seats and two 12-foot drink rails for standing-room gatherings during busy evenings.
Beginning this Friday, the all-day destination will operate from 11 a.m. to 11 p.m., with offerings changing throughout the day. The Market will remain open all day, made-to-order sandwiches will be available until 3 p.m., and grab-and-go items will be offered from 3 p.m. until close. The wine bar will operate from 4 to 11 p.m., while dinner service runs from 5 to 11 p.m.
