Year-Long Irish Charm at Slattery’s Pub & Grill

When my dad said he had a hankering for corned beef and cabbage in February, there was one place to go, Slattery’s Pub & Grill in Greenwood Village. Here Irish lamb stew, shepherd’s pie, corned beef, and Guinness grace the menu all year long, holiday or not. However, each March 17 guests can expect a big, multi-day party, but more on that down below.

Slattery’s got a revamp in 2019 when the current owner, Bill Psyllas, bought the 5,000-square-foot pub. Psyllas, who also owns Hilltop Tap House in Parker, revamped the dark Irish restaurant, brightening the space while keeping the solid wood bar and vibe intact. Today it’s more of a sports bar with a strong Irish background, and the perfect place to go to get that fix my dad craved.

Corned beef is a specialty of the restaurant, and makes its way into a plethora of dishes. Of course the heaping plate of corned beef and cabbage ($18) was top of our list. One order could serve two easily, and the tender sliced meat comes with mashed potatoes, a rich mustard sauce, and a dinner roll on the side. 

For even more of the succlent cured meat, the corned beef egg rolls ($12.50) are a fun way to start the meal. Each order comes with three large pieces cut in half, and filled with diced potato, cheddar, and sauerkraut, with an addictive spicy mustard sauce to dip it in. Or opt for a tasty corned beef sandwich ($15.75) or classic reuben ($16) instead.

Over all the menu leans toward bar fare, something a lot of traditional Irish and British food fits into. Look for bangers and mash ($19), shepherd’s pie ($19), and fish and chips with malt aioli ($17.75). You’ll also find Irish Nachos, a decidedly non-Irish dish. However, given the impressive pile of waffle fries, cheese, beans, peppers, tomato, and more, we won’t argue that the composition hits all the right spots.

Drink This

With a stunning bar, Slattery’s has a place for any sort of drinker. Of course Guinness flows from the tap, as well as Smithwick’s Irish Ale. Naturally, Irish whiskey is another specialty. Over 20 types grace the menu from Clontarf to The Quiet Man to Kilbeggan. If you’re sick of the Irish theme, there’s always domestic pours, wine and plenty of scotch and bourbon.

On the drinking side, the St. Patrick’s Day party at Slattery’s is one of the best in town. This year, starting March 15 the fun commenses with live bands, food and drink specials, contests, and overall cheer the whole weekend. It’s free to attend and the festivities carry out onto the sectioned off street.
