The customers wanted dinner service and The Green Collective Eatery co-founder Allison Rifkin listened.

“We started getting requests for it and [customers] wanted to know why we didn’t stay open and add dinner,” said Rifkin. “Wash Park has such a wonderful space, so we decided why not, and see how it goes.”

Now, after almost two years open, the Washington Park location serves daily from 7:30 a.m. to 7:30 p.m. The main crux of the dinner menu includes hearty bowls perfect for well-rounded meals on the go, all with the eatery’s ethos on keeping food clean, nutrient-dense, and tasty.

The current menu features five gluten-free options ranging from $12 to $14, such as the Machita Bowl with roasted veggie hash, quinoa, greens with cumin-lime vinaigrette, avocado, pickled onion, cashew-chipotle crema, salsa macha, and cilantro. There’s also the Umami Bowl spiked with kimchi, roasted mushrooms and greens, sesame cucumbers, rice, miso tahini dressing, and furikake seasoning. Each comes with a choice of protein including soft scrambled eggs, grilled lemon chicken, seed-crusted tofu, short rib, and more.

“When I want something for dinner I want to order something nutritionally balanced that tastes good,” added Rifkin. “Right now we are getting a lot of deliveries.”

The first Green Collective opened in March, 2021, as a fast-casual breakfast and lunch spot in Highland. It’s known for serving diet-friendly smoothies, smoothie bowls, salads, toasts, adaptogenic lattes, coffee, and tea. Most of the ingredients are superfoods, organic, and don’t contain refined sugar. While the Highland location doesn’t do dinner yet, Rifkin said the team wants to launch it soon.

Visit The Green Collective every day starting at 7:30 a.m., and until 3 p.m. in Highland, and 7:30 p.m. in Washington Park. 1058 S. Gaylord St., Denver; 2158 W. 32nd Ave., Suite 100, Denver, greencollectiveeatery.com
