This fall, Bludorn Hospitality Group—the acclaimed hospitality company from chef Aaron Bludorn, Victoria Pappas Bludorn, and Cherif Mbodji—will open a new concept in San Antonio’s Pearl district, marking the group’s first restaurant outside the greater Houston area.
The forthcoming project will take over the historic Boehler’s Liberty Saloon building, a 19th-century structure set among Pearl’s growing collection of destination restaurants and bars. The opening represents a major milestone for the Houston-born group, which has quickly become one of the state’s most closely watched hospitality companies since launching its flagship restaurant, Bludorn, in Montrose in 2020.
In the years since, the trio has expanded significantly, building a portfolio that includes seafood-driven Navy Blue in Rice Village, Memorial-area neighborhood gem Bar Bludorn, and Perseid inside Hotel Saint Augustine, steps from the Menil Collection in Montrose. Each concept blends polished hospitality with Gulf Coast influences and a distinctly Houston perspective—one the team now hopes to bring to San Antonio.
Last year, Bludorn Hospitality Group also announced plans to open a second location of Bar Bludorn in the Woodlands, initially signaling the company’s ambitions beyond central Houston. While details on that project remain limited, the dual expansion reflects the rapid rise of the group, which has evolved from a single acclaimed restaurant into one of Texas’ most influential hospitality brands in just a few years.
