Coffee Meets Cocktails at the Best Day-Night Spots in Denver

From cafes that turn into cocktail bars, and bakeries that flip into restaurants, these spots fit the mood from morning to night.

Last year, we predicted one of the culinary trends of 2026 would be eateries getting the most bang for the buck out of the rent by embracing day-to-night concepts and multi-use spaces. We’re seeing that trend play out with more and more places around town. Think cafes turned into cocktail bars at night, early morning bakeries flipped into restaurants after dark, and side-by-side concepts with coffee and breakfast on one side and dinner and drinks on the other.

It’s no surprise operators are looking to maximize their square-footage, especially as commercial rents have risen 23% since 2019, according to the 2025 State of Denver Restaurants Report. They’re paying for the space whether the doors are open or not, so it makes sense to cast a wider net by appealing to early risers, the evening crowd, and everyone in between.

From sunrise lattes to martini nightcaps, here are some of Denver’s top day-to-night destinations.

Caffeine to Cocktails

As the day wears on, this sleek neighborhood haunt seamlessly transitions from coffee joint to cozy date night spot. In the morning, indulge in some fancy coffee offerings such as cardamom cream cold brew and Dalgona whipped coffee. To eat, grab a toasted baguette with French butter and jam and grapefruit with honey (available until 2 p.m.), plus pastries by Rebel Bread until they sell out. For lunch, pick up a sandwich such as the grilled cheese, which comes on a fresh baguette layered with gorgonzola, parmesan, cherry jam, and dijon. 

Then, it’s time to circle back at night for a crafted cocktail or natural wine. There’s also a steady lineup of programming, from live music and art exhibitions to dinner pop-ups and a monthly creative co-work session designed to foster “creative accountability.” Pro tip: there’s also a late night happy hour from 10 p.m. to close every night. 619 E. 13th Ave., hudsonhilldenver.com 

Side Pony

Located on West Colfax, Side Pony sits alongside sister businesses Duality, a fitness studio with offerings like hot yoga, circuit classes, and personal training, and Original Glam. Pop into the coffee shop and cafe after an early morning pilates class for a pick-me-up, or swing by for happy hour with friends after an oxygen facial. 

In addition to the usual caffeinated suspects like cappuccinos and matcha, there’s also health-forward options including protein shakes and wellness smoothies. Need a solid option? Go for one of the all-day breakfast items such as avocado toast and Bonfire Burritos

From Tuesday through Saturday, this cute coffee bar stays open late, with a steady lineup of fun events such as candle making classes, oyster and caviar pop-ups, flash tattoos, and trivia nights. As the day winds down, the menu shifts to craft cocktails like margaritas and espresso martinis, along with snackable items including charcuterie and pickled okra. Happy hour is available from Tuesday through Friday from 2 to 7 p.m., and all day Saturday to Monday with $9 select cocktails, house wines, and small bites. 4635 W. From the team behind Olive & Finch, Little Finch opened on 16th Street in 2023 as a fast-casual offshoot of chef Mary Nguyen’s chef-driven concept. The buzzy all-day cafe offers a reprieve for the corporate downtown crowd with craft coffee and cocktails alongside sweet and savory pastries, flatbreads, soups, salads, and gourmet grab-and-go options, all made from scratch.

The airy space is equally suited for morning coffee jaunts, midday lunch breaks, and impromptu happy hours; or, a quick shopping run at the retail wall stocked with locally sourced goods like pickles, jams, hot sauces, soaps, and lotions. Whatever the occasion, with 50 seats inside and an additional 32 on the patio, there’s plenty of room to post up. 1490 16th St., oliveandfinch.com

Just blocks away from the Denver Center for the Performing Arts and the convention center, this sprawling space centers around a white marble U-shaped bar, with plenty of communal seating throughout. Whether at the bar, at a counter facing the floor-to-ceiling windows, or on the couches and armchairs around the fireplace, there’s tons of room and outlets to plug into, making it an ideal spot to work remotely, take a business meeting, or simply relax. 

As the name suggests, customers can also grab a glass of wine or a cocktail like a basil gimlet or Curtis St. Latte with whiskey, creme liqueur, espresso, chai-steamed milk, and cinnamon. Improper City

Improper City in RiNo is the quintessential coffee by day, adult beverages by night Denver spot. The sprawling space functions like a remote work hub during the day, with a variety of small tables, communal areas, electric outlets, couches, and armchairs. There’s even a private phone booth to take calls. Fuel up with a lineup of espresso drinks and light bites, or grab lunch from the rotating roster of food trucks parked out on the expansive dog-friendly patio.

The energy shifts into a casual hangout in the evenings with a full bar pouring beer, wine and cocktails. The space regularly hosts events and meetups, from work happy hours and comedy nights to live music and community gatherings. ESP HiFi

Friday through Monday, this moody vinyl bar opens at 10:30 a.m., offering a quieter, more intimate analog listening experience before the energy builds in the evening. Inspired by Japan’s traditional kissa bars, the Santa Fe spot pairs an impressive selection of natural wines with a carefully curated soundtrack that shifts with the energy of the room.

During the day, the vibe leans calm and contemplative, with music ranging from ambient and experimental to classical and psych folk. The tempo picks up at night, with international cuts spanning dub, jazz, Motown, and synth pop. Tea and coffee anchor the daytime hours, before giving way to thoughtful cocktails and natural wines, alongside a small selection of bites like truffle chips and bread with butter and jam. 1029 Santa Fe Dr., Denver, esphifi.co 

Hello Darling

With locations in Highlands Square and on Little Raven Street across from Commons Park, this part-cafe, part-cocktail bar offers a place to post up in two of Denver’s trendiest neighborhoods. By day, Hello Darling functions as a coffee shop, with a lineup of espresso drinks and pastries sourced from Hearth, and plenty of tables and counter seating for settling in with a laptop or a good book. 

Come evening, it shifts into a cocktail bar, where guests can sink into pink and green velvet couches or comfy armchairs as the vibe stays relaxed well into the night. Located on the ground floor of Patten Gray, a 13-story residential building in the Golden Triangle neighborhood, Flora is a cozy, plant-filled space that feels like a tucked-away garden retreat.  Natural materials like wicker chairs and warm wood accents help in setting that tone.

By day, Flora offers specialty coffee and artisanal pastries before transforming into an intimate watering hole in the evening with a curated selection of bottles, cocktails, and light bites. A lineup of community-driven events, including trivia nights, keeps the space buzzing well into the night. 380 W. 12th Ave., Denver, floradenver.cafe

Ace Eat Serve

Known for eclectic Asian food, huge pup-friendly patio, and epic ping pong battles, Ace Eat Serve added a daytime coffee bar last year, opening early for those looking to get some work done or just hang out. There’s free WiFi, lots of space to work and, of course, ping pong tables when you need a break. 

For breakfast, we recommend the Smash-saunt, a large, pressed croissant dipped in rotating daily flavors like strawberry and pistachio white chocolate. The menu also features pastries including muffins, cookies, and danishes; breakfast Bao-rittos; espresso drinks; Thai iced tea; Vietnamese iced coffee; and specialty beverages like Black Sesame Matcha Latte. Come dinner, the focus shifts to shareable plates including bao, dumplings, wings, and the standout Peking duck experience for two to four. 501 E. 17th Ave., Denver, aceeatserve.com 

Sap Sua

Sap Sua on East Colfax won fans with its modern take on Vietnamese cuisine, and the trứng và trứng with soft scrambled eggs, brown butter, fish sauce, and trout roe is one of the city’s best dishes. Typically open for dinner service, the eatery reintroduced a bakehouse concept last October, available Saturday mornings from 8 a.m. to noon.

Helmed by Sap Sua co-owner Anna Nguyen and pastry chef Korinna Mahan, the bakery’s rotating menu features a mix of classics like brownies, apple fritters, and pecan monkey bread alongside more inventive pastries including butterscotch com dep cookies, Vietnamese banana coconut rum cake, seasonal pop tarts and galettes, and pho-braised oxtail hand pies. Divide and Dine

With sandwiches at Odie B’s and eclectic pasta dishes at Boombots Pasta Shop, this Sunnyside staple is split down the middle by a door the team affectionately refers to as “the pasta portal.” Odie B’s first opened in 2022 and became known for breakfast sandwiches, burgers, and brunch offerings. When the art gallery space next door became available, owners Cliff and Cara Blauvelt jumped at the opportunity to take it over and transformed it into Boombots, which debuted last November.

Odie B’s runs from 8 a.m. to 2 p.m. daily. Once it closes, the entire operation flips. By the time Boombots opens at 4 p.m., the kitchen has been fully reconfigured into a pasta-making station for dinner service. The restaurant has quickly become a cult favorite for its boundary-pushing dishes like samosa agnolotti and the fan-favorite Big Ass Mozz Stix, alongside equally cheeky drinks like pasta water martinis. With a sandwich shop next door slicing meats and cheeses all day, the eatery’s charcuterie game is also really strong. St. Mark’s Coffeehouse & Thin Man

Creatives have gravitated to St. Mark’s Coffeehouse since it first opened in the 1990s. Owned by husband-and-wife team Eric Alstad and Christina Pappas, the cafe offers a lineup of hot and cold espresso drinks, matcha, chai, and different types of tea, while the pastry case is stocked with house-made items like cookies, scones, croissants, and a variety of paninis. Grab a drink and a bite and settle into one of the old church pews lining the walls or head out back to the sprawling patio, shared with the couple’s neighboring bar, Thin Man.

The duo refinanced their home to purchase the adjacent space and opened the moody dive bar in 2001. Step inside to find a long, white marble-top bar, red string lights, and walls lined with religious iconography, a nod to Alstad’s Greek orthodox background. Open daily until 2 a.m., it’s the kind of spot where you can grab a beer, a well drink, or a specialty house cocktail. Coming Soon: Velvet Lasso Cafe & Lounge

Velvet Lasso debuted its coffee shop in the former Noisette space on Valentine’s Day this year, with the adjacent lounge and cocktail bar expected to open on April 20. By day, the cafe leans into a sultry, vintage parlour aesthetic wrapped in deep maroon and mauve tones with plush loveseats, cozy armchairs, and kitschy tchotchkes scattered throughout the space. The pastry case is filled with Italian-inspired baked goods from butter cookies and pistachio cannolis to rainbow cookies reimagined in shades of red, pink and violet, alongside laminated pastries and sandwiches served on house-baked bread.

When the lounge opens this spring, the space will expand into a moody hangout made to feel like someone’s great aunt’s living room with comfy couches, clusters of chairs and intimate pockets designed for settling in. The menu will balance playful and indulgent dishes like Big Kid SpaghettiOs and steak frites, while the bar program aims to follow suit with offerings like a tiramisu cold-foam espresso martini and martini flights. 3254 Navajo St., Suite 100, thevelvetlasso.com 

Retro Motels with All-Day Vibes

Nestled inside the recently renovated La Vista Motel on Colfax, this restored 1960s space makes it a true mid-century modern time capsule. The all-day hangout debuted last December, serving locally roasted Servant Coffee alongside breakfast bites earlier in the day, before transitioning into a full cocktail program by happy hour. Be sure to check out its array of programming like the occasional Wine Wednesday with tastings and pairings, plus live music. On Monday nights check out the comedy open mic downstairs in Grandma’s Basement speakeasy, which is decorated to look like a basement from the 1970s with wood panel walls adorned with photos and a mid-century modern porcelain fireplace filled with lava lamps. 5500 E. All Is Well at the All Inn Motel

The All Inn Hotel has seen many iterations since it first opened on Colfax in 1959. New ownership took over in 2016 and it has been closed for renovations since 2022. Nearly four years and $22 million later, the property is slated to reopen its doors to the public on March 26 with a refreshed lineup of offerings, including the All Is Well bar and cafe in the lobby.

The vintage-inspired space features communal tables with retro lamps, great for catching up on some work or solving the day’s New York Times puzzles. There’s also plenty of seating for casual coffee meetings, lunch dates, or lingering over a drink. Pop in for a quick espresso or grab a cocktail before heading next door to FiNO, the Mediterranean restaurant housed in the hotel’s former dive bar space, Rockbar. Don’t miss the Medi Nachos, which comes with prosciutto and grated parmesan over crispy potato chips, or the decadent mortadella melt. 3015 E.
