Less than two years after debuting in Snider Plaza, El Molino is expanding its footprint. The upscale Tex-Mex concept from Vandelay Companies will open its second Dallas location on Monday, August 10, bringing its wood-fired fajitas, flaming margaritas and lively atmosphere to 6025 Royal Ln., Ste. 250 in Preston Royal Shopping Center.
The new restaurant takes over the former Anchor Sushi Bar space, a move that reflects Vandelay’s evolving strategy for its growing portfolio. After experimenting with Anchor in multiple formats, the Dallas-based hospitality group determined the larger Preston Hollow location was a better fit for El Molino’s high-energy dining experience, allowing the brand to continue building on the momentum it has gained since opening last year.
At nearly 6,000 square feet, the new outpost offers significantly more room than its Snider Plaza predecessor, making space for an expanded menu while preserving the neighborhood feel that helped make the original one of Dallas’ standout Tex-Mex openings of 2025.
The menu remains anchored by El Molino’s signature fajitas, featuring USDA Prime tenderloin that’s butchered in-house and cooked over wood-fired smokers. Guests can also choose from grilled chicken, jumbo tiger shrimp, marinated prime ribeye or combination platters built for sharing.
Beyond the fajitas, diners will find a broader lineup of appetizers, including queso, elote corn chowder and fresh tuna nachos, alongside tacos, enchiladas, salads and entrées such as the Las Vegas Ribeye, Crispy Shrimp Brochette, Filet Mignon Famosa and Grilled Sonora Quail.
The beverage program remains a major part of the experience, led by the restaurant’s signature Flaming Margarita, plus handcrafted cocktails, rare sipping tequilas and frozen margaritas in flavors like passion fruit, pineapple jalapeño, cherry vanilla and mango.
The Preston Hollow location will also introduce a daily happy hour from 3 to 6 p.m., featuring $9 Frozen Flaming Margaritas, sangria and house margaritas served frozen or on the rocks.
The opening is the latest milestone for Vandelay Companies, which now operates 12 restaurant brands across 31 locations nationwide and recently added Dallas favorites Tei An and Ten Ramen to its portfolio. As the hospitality group continues to expand, El Molino’s second location signals that its modern take on Tex-Mex is quickly becoming one of its fastest-rising success stories—and Preston Hollow is next in line to see what all the buzz is about.
