It is time for Winter to depart and the warm days of Spring to begin as we prepare for a fun Summer of festivities with Denver fully open and thriving. To get us in the mood and have you jump on the bandwagon with me, I have made a list of three restaurants with budding names and accompanying vibrant foods for you to enjoy. Come along as we peek into what will be served up at these Denver spots in the coming months.

GreenSeed MKT

2669 Larimer St, Denver, CO 80205

“Green Seed is a neighborhood produce shop with a twist; we put our produce on your plate. We are not a traditional salad bar; think of us as a vegetable-forward restaurant with dishes with all the yummy things you like in a salad without all the filler. Our chef-inspired food showcases our produce and helps customers shop for meals they can prepare at home. We are excited to meet our neighbors and share with them our fresh juices, made-to-order salads, and morning snacks in this unique market experience.”

Apple Blossom

822 18th St, Denver, CO 80202

“From the team behind Beast + Bottle and Coperta, Apple Blossom is a lively farm-to-table restaurant inside the Hyatt Centric Downtown Denver. We celebrate the best of America’s seasons, offering breakfast, lunch, and dinner, focusing on the agricultural bounty of local and regional ranchers, farmers, and purveyors.”

Flower Child

3110 E 1st Ave, Denver, CO 80206

“We’re on a simple, soul-satisfying mission to serve positively delicious vibes to the Denver community. Chock full of nourishing goodness, our made-from-scratch menu caters to all lifestyles, from vegetarian and vegan to meat-eating and gluten-free to keto and paleo. With a customizable menu of bowls, wraps, salads, and various mix-and-match veggies, grains, fruits, and healthy proteins. Flower Child is more than your typical healthy eatery – it is a place where you can come and fill your soul (and belly) with goodness.”
