Denver Chef’s Tasting Pop-Up Delights at Margot

As a resident of Denver, where our laid-back culture reigns supreme, I can assure you that pretentious habits hold no place in our dining scene. It is precisely this laid-back yet elevated experience that Chef Justin Fulton aimed to capture when he opened Margot in September of 2022. Over the course of nearly a year, Margot has become a hidden gem, flying under the radar as it takes the stage as a sensational two-day-a-week pop-up.

Chef Justin, a native to Colorado, voyaged on a gastronomic journey that took him across borders and continents, from the halls of culinary excellence in North Carolina to the revered kitchens of culinary mecca, France. He then found himself amid the bustling culinary scene of the Big Apple before heading to the vibrant city of Detroit. But it was destiny’s hand that finally brought Chef Justin back to his beloved home state, accompanied by his loving wife and son. It was during this return that he crossed paths with the esteemed Chef Paul C. Reilly, permitting space for culinary freedom that would give birth to the extraordinary Margot.

On Wednesdays, the enchanting Margot menu comes to life at Huckleberry, located on the corner of Tennyson and 41st. With a dedicated team of six, the kitchen becomes their domain from 6:00 PM to 9:00 PM, catering to reservations of 1 to 6 diners. While the location may not hold a liquor license, fear not, for a plethora of non-alcoholic alternatives await, including the delightful Three Spirit Nightcap and their exquisite Sharp-Blurred Vines wine alternative. Sundays usher in a wine and dine experience at the charming Coperta in Midtown, where from 5:00 PM to 9:00 PM, guests are treated to a gastronomic journey of 10 delectable dishes, complete with optional wine pairings.

Margot’s menu is a testament to the celebration of freshly sourced ingredients, spanning from the bountiful local fields of Esoterra Farm to the mystical caves of Switzerland. We savored the flavors of Esoterra Farm‘s fresh produce, which graced several of our dishes, while the earthy morel mushrooms, procured from Olympia Rare Foods, added a touch of decadence to the Manchester Farm Quail creation. As a special treat from Switzerland, the illustrious Kaltbach Cremeux cheese arrived, adorned with a drizzle of Bjorns Royal Honey. Among the culinary highlights, the Parisian Gnocchi stole the show with its fusion of purple snow peas, brown butter almonds, and agretti. My personal favorite was the Scallop Tartare, an exquisite medley of avocado, coriander, and caviar.
