Gaby has been part of the Denver/Boulder food scene since 2015 when she moved to Colorado. While gradually losing her ability to eat due to six years of misdiagnosed food allergies, she became fascinated with the culinary scene. As the self-proclaimed traveler of DiningOut, a title I proudly uphold while crafting this article from a charming café in Puebla, Mexico, it seems only fitting for me to be your culinary compass through the diverse dining landscape of Denver International Airport (DIA). Given my custom of arriving at the airport well in advance—an ingrained habit ensuring the gates are firmly in place—I find ample time to savor a delightful meal and perhaps a libation at the same concourse or even explore another.

As many of you have likely witnessed, the airport has undergone substantial expansion over the past couple of years, and for food enthusiasts like ourselves, the most exciting development is just around the corner. Mizu Izakaya, renowned in LoHi for its trendy ambiance and a clientele that includes ball players and locals alike, is set to open its doors in a mere couple of months. Expect fresh sushi and a vibrant atmosphere that will undoubtedly elevate your pre-flight experience. But that’s not all—the expansion is also rumored to welcome other heavyweights from Denver’s culinary scene, such as Mister Oso, Bar Dough, El Chingon Mexican Bistro, ChoLon, and The Bindery, to name just a few.

Rather than inundating you with an exhaustive list of options, I’ve opted for a more digestible approach by categorizing them according to meal times, including those delightful interludes reserved for drinks, snacks, and desserts. So, join me on this journey, and before you board your flight, take a moment to indulge at one of these establishments. Just be sure to keep a watchful eye on the clock, as losing yourself in the allure of great food could inadvertently lead to missing your flight. Bon appétit and safe travels.
