The Best Pizza Adventure Has Landed at Slice House Boulder

When a world pizza champion launches a Boulder restaurant, it’s bound to gain fans.

In October, 2025, chef Tony Gemignani opened his first Colorado location of Slice House in Loveland. But now Boulder has the second spot, and it’s one of the best pizza shops in town. 

“Boulder felt like a no-brainer for Slice House,” said Gemignani, who started the first iteration of the fast-casual restaurant in 2010 in San Francisco. “We’re excited to become a go-to neighborhood spot where families, college students, professionals, and more can expect delicious craft pizza in a spirited environment.”

Located in the Twenty Ninth Street shopping district, the eatery serves up crispy New York slices, thick-crust Sicilian squares, homestyle Grandma pies, and Detroit-style, along with pasta, wings, and hearty salads. Each of those aforementioned styles of pizza lean traditional, and should satisfy even the grumpiest of pizza connoisseurs. 

It’s not surprising Slice House dishes up quality. After all, Gemignani got his name in the pizza world after 13 wins at the World Pizza Championship, a contest that started in Italy in 1991. The NY slices prove large and foldable, without all the toppings sliding off. Each Sicilian slice towers, but each bite proves unexpectedly fluffy. Then the Detroit-style, which uses a different, denser dough, is perfect for supporting the surrounding cheese crust.

Pies can be ordered whole, or opt for one of the many slices displayed NYC-style in a case up front. Just like the Big Apple, Slice House heats the individual slices in an oven for maximum freshness and flavor. While the options always change, expect to always see cheese and pepperoni on display. 

Other combinations include a New Jersey Tomato Pie, BBQ Chicken, the Drunken Italian with vodka cream sauce and bacon, and the tomato-free Tony Jack with mozzarella, ranch, bacon, green onions, peppadew peppers, and honey. Bonus, most of the flavors show up on all the styles, making it easy to get your favorite pairing.

The pasta menu includes Bucatini With Meat Sauce, Gemelli With Pesto Sauce, Alfredo, and even plain noodles. Wings, meatballs, Italian sausage, garlic bread, and a meatball sub appear on the appetizer menu, and traditional salads such as the caprese and Caesar are also available. The House Craft Salad stands out with mixed greens, castelvetrano olives, red onions, gorgonzola, candied walnuts, and peppadews. Everything comes out quick and fresh, and easy to take home.

Expect to see more locations of Slice House soon. Gemignani said restaurants in Longmont and Denver should open this year, and he plans to have 10 more coming throughout Colorado. 

“We love being here and hope to continue growing our presence throughout the state,” he added, and we’re pretty happy Slice House has landed here too.
