Houston’s dining scene welcomes a quietly ambitious newcomer this week as Osteria di Mercato opens Wednesday, April 1, at 3642 University Boulevard, Suite 101 in West University Place. The intimate, 30-seat restaurant introduces a refined, thoughtfully executed take on Italian cuisine to the West U neighborhood, complemented by a wine list centered on native grape varietals from across Italy, within a dinner-only format.
At the helm is Executive Chef Mauricio Alvarado, a Houston native who began cooking at just 16 with the Tony Vallone Company, moving through some of the city’s most respected kitchens, including Ciao Bello, Vallone’s Steakhouse, and Tony’s. He later joined the opening team at Bludorn, where he further honed a style defined by precision and ingredient-driven cooking. In pursuit of deeper refinement, Alvarado spent time in California staging at Michelin-starred institutions such as the French Laundry, Manresa, Quince, and Benu, and held subsequent roles at Octavia, Sorrel, and Cyrus 2.0. Now back in Houston, his approach at Osteria di Mercato is grounded in seasonality and sourcing, with a focus on working closely with local farmers and producers to create food that feels both personal and place-driven.

Leading the front of house is General Manager and sommelier Marco Thompson, whose perspective is shaped by a life split between Houston and Italy. An award-winning hospitality professional, Thompson most recently served as Director of Operations for Sammarco and the Michelin-starred Osteria Giulia in Toronto, where he earned recognition as the 2023 Michelin Guide Toronto Sommelier of the Year. Known for his narrative-driven approach to wine service, Thompson brings a deep knowledge of Italy’s regional varietals and traditions to the dining room, curating a program that is as educational as it is inviting. Together, his sensibility for hospitality and storytelling complements the kitchen’s philosophy, creating a cohesive and transportive Italian dining experience.

The menu reflects that philosophy, unfolding as a tightly edited progression of Italian classics grounded in tradition and sharpened by restraint. Antipasti such as saffron-laced arancini, stracciatella with salt-crusted kohlrabi, and delicate crudo set the tone, followed by a focused selection of pastas including spaghetti alla chitarra with confit tomato and basil, smoked ricotta-filled agnolotti, and a white Bolognese rigatoni.
From there, lean into composed, ingredient-driven plates such as branzino for two with seasonal vegetables, chicken with eggplant ragù, and a pepper-crusted hanger steak with polenta, while desserts like the Basque-style chocolate cheesecake offer a measured, elegant finish.

Altogether, the dinner-only format reinforces the restaurant’s ethos: a focused, unhurried exploration of Italian cooking where each dish is given space to resonate.
